Frying a Turkey at Extremely High Temperatures Can Be Dangerous.  Butterball.com recommends heating the oil to 375 degrees.  Yet hot oil will start to burn at a temperature not too much higher than that at around 425 degrees.  Plunking a 20 lb bird into such hot oil is a recipe for disaster.

Thanksgiving 2020, twenty-seven people in Massachusetts  discovered just how dangerous deep frying a Turkey can be when a neighbor ignited the deck around a deep fat fryer.  The fire spread and destroyed 3 structures misplacing 27 people and seriously injured a woman.   The Boston Globe Nov 26, 2020

The National Fire Protection Association strongly advises against cooking your Thanksgiving bird in a Deep Oil Fryer.  Here are the facts:

• Thanksgiving is the ‘Peak’ Day of the year for home cooking fires with more than 3 x the daily average for home cooking fires
• On Thanksgiving day in 2019, Fire Depts across the United States responded to an estimated 1,400 home cooking fires
• Unattended cooking was by far the leading cause in those cooking fires
• Cooking causes ½ of all reported home fires

With a little bit of thought and research they are many other ways to cook a turkey that will produce a moist, flavorful bird. Cooking techniques such as: brining the turkey, rub butter under the skin , cook the turkey upside down for the 1^st hour / then flip it over, don’t overcook it, let the turkey rest for 20 minutes before carving to give the juices time to distribute throughout the bird.

Help prevent a house fire this Thanksgiving by using one or all of the techniques listed above. This will insure a moist turkey (and a happy family) and keep everyone safe in the process.
